The Role of Metacognition in Teaching and Learning

    I am Kwame Ampofo Attafuah a graduate from University of Cape Coast, Ghana with B.Sc. Agriculture and currently at my final year at Jiangsu university, china studying masters in food science. The English has been my medium of instruction throughout my academic career since it’s the national language in my country, Ghana. I came to Jiangsu University, China to pursue a masters in Food Science Engineering with the aim of getting deeper knowledge in both theoretical and practical aspects. I got excellent Education at this Premier University covering wide range f subjects which has given me enough practical and research skills and knowledge in conducting experiment and analyzing results. My Research Interests includes Chemistry, biochemistry and nutrition of food components in plant foods, food processing and utilization of processing by- products, Process-induced chemical and biochemical changes in foods in order to understand the nutritional costs of maintenance functions of the various food components. I have gained a lot of teaching and research experience in the field of agriculture and environmental science through my teaching schedule and have worked with local Non-governmental Organizations to monitor the operational activities of scale mining companies “Galamsey’ around Upper Denkyira East Municipality of Ghana.
